Instructions

  1. Preheat oven to 350°F (175°C). Grease or line a 9×5-inch loaf pan with parchment paper.
  2. Mash the bananas in a large bowl until smooth.
  3. Cream butter and sugar together until light and fluffy, or whisk melted butter/oil with sugar for the one-bowl method.
  4. Add eggs one at a time (or flax eggs), then stir in mashed bananas and vanilla extract.
  5. In a separate bowl, whisk flour, baking soda, and salt.
  6. Gradually fold dry ingredients into wet mixture. Do not overmix.
