- 2 large eggs (or flax eggs)

Instructions
- Preheat oven to 350°F (175°C). Grease or line a 9×5-inch loaf pan with parchment paper.
- Mash the bananas in a large bowl until smooth.
- Cream butter and sugar together until light and fluffy, or whisk melted butter/oil with sugar for the one-bowl method.
- Add eggs one at a time (or flax eggs), then stir in mashed bananas and vanilla extract.
- In a separate bowl, whisk flour, baking soda, and salt.
- Gradually fold dry ingredients into wet mixture. Do not overmix.
- Optional: stir in Greek yogurt or sour cream for extra moisture.
- Toss mix-ins with 1 teaspoon flour, then gently fold them into the batter.
- Pour batter into prepared loaf pan and smooth the top.
- Bake for 55–65 minutes, rotating halfway through, until a toothpick comes out with moist crumbs.
- Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
