Ingredients
Scale
- 1 cup all-purpose flour
- 2 large eggs (room temperature)
- 1¼ cups whole milk (room temperature)
- 3 tablespoons melted butter (slightly cooled)
- 1 tablespoon sugar
- ¼ teaspoon salt
- 1 cup heavy cream (cold)
- 2–4 tablespoons powdered sugar
- 1 teaspoon vanilla extract
- 1 cup chocolate chips or chopped dark chocolate (60% cacao)
- 2 tablespoons butter
- ½ cup milk
- 2 tablespoons sugar
- Vanilla ice cream (or preferred flavor)

Instructions
- Prepare crepe batter by blending flour, eggs, milk, melted butter, sugar, and salt until smooth. Rest for 30 minutes.
- Heat an 8-inch non-stick skillet over medium-low heat. Pour ¼ cup batter and swirl to coat evenly. Cook 1–2 minutes, flip, then cook 30–60 seconds more.
- For chocolate sauce: melt chocolate, butter, milk, and sugar over medium-low heat while whisking until smooth. Add a pinch of salt and vanilla if desired.
- Whip heavy cream with powdered sugar and vanilla until stiff peaks form.
- Warm crepes and fold into quarters or roll around fillings.
- Plate crepes, add scoops of ice cream, and dollop with whipped cream.
- Drizzle with warm chocolate sauce and garnish with berries or mint before serving.
Notes
Resting the crepe batter improves texture. Keep crepes warm in a low oven while preparing toppings. Use high-quality chocolate for the best sauce flavor.
