Description

  • 1¼ cups whole milk (room temperature)
  • 3 tablespoons melted butter (slightly cooled)
  • 1 tablespoon sugar
  • ¼ teaspoon salt
  • 1 cup heavy cream (cold)
  • 24 tablespoons powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup chocolate chips or chopped dark chocolate (60% cacao)
  • 2 tablespoons butter
  • ½ cup milk
  • 2 tablespoons sugar
  • Vanilla ice cream (or preferred flavor)
  • Optional garnishes: fresh berries, mint sprigs, powdered sugar

Instructions

  1. Prepare crepe batter by blending flour, eggs, milk, melted butter, sugar, and salt until smooth. Rest for 30 minutes.
  2. Heat an 8-inch non-stick skillet over medium-low heat. Pour ¼ cup batter and swirl to coat evenly. Cook 1–2 minutes, flip, then cook 30–60 seconds more.
  3. For chocolate sauce: melt chocolate, butter, milk, and sugar over medium-low heat while whisking until smooth. Add a pinch of salt and vanilla if desired.
  4. Whip heavy cream with powdered sugar and vanilla until stiff peaks form.
  5. Warm crepes and fold into quarters or roll around fillings.
  6. Plate crepes, add scoops of ice cream, and dollop with whipped cream.
  7. Drizzle with warm chocolate sauce and garnish with berries or mint before serving.

Notes

Resting the crepe batter improves texture. Keep crepes warm in a low oven while preparing toppings. Use high-quality chocolate for the best sauce flavor.
